Traditional pie crusts are made with all-purpose flour, which does contain gluten. As more people become aware of the necessity of gluten-free options, more recipes are being created. You can still experience the same delicious desserts you always have. There are easy alternatives that taste just as good as the foods you may be used to. Below is a gluten-free pecan pie recipe you can make all year round. It’s made with healthy ingredients and is a delicious dessert for anyone who loves this decadent nut.

 

Kimberly Snyder’s Raw Pecan Love Pie (makes 1 pie)

 

Crust ingredients:

  • 2 ½ cups pitted dates

  • 1 cup finely ground coconut flakes

  • 1 ½ cups walnuts (soaked, 4 hours)

Directions:

Add the dates, coconut flakes and walnuts to a food processor and process on high until thoroughly mixed. Press the mixture into the bottom and sides of a round 9” pie plate. Set the pie plate to the side.

 

Filling ingredients:

  • 2/3 cup filtered water

  • 1 cup raw pecans, soaked about 15 minutes, plus more to garnish

  • 1 cup organic raisins

  • 1 Tbs. vanilla extract

  • 1 tsp. nutmeg

  • 1/3 cup maple syrup

  • 1 tsp. Celtic sea salt

 

Directions:

Blend all the filling ingredients together in a blender until smooth. Pour the filling into the pie shell and garnish with raw pecans. Chill the pie in the freezer overnight or for at least 5 hours before serving.
