Below is a gluten-free pecan pie recipe you can make all year round. It’s made with healthy ingredients and is a delicious dessert for anyone who loves this decadent nut.
Kimberly Snyder’s Raw Pecan Love Pie (makes 1 pie)
2 ½ cups pitted dates
1 cup finely ground coconut flakes
1 ½ cups walnuts (soaked, 4 hours)

Add the dates, coconut flakes and walnuts to a food processor and process on high until thoroughly mixed. Press the mixture into the bottom and sides of a round 9” pie plate. Set the pie plate to the side.
2/3 cup filtered water
1 cup raw pecans, soaked about 15 minutes, plus more to garnish
1 cup organic raisins
1 Tbs. vanilla extract
1 tsp. nutmeg
1/3 cup maple syrup
1 tsp. Celtic sea salt
Blend all the filling ingredients together in a blender until smooth. Pour the filling into the pie shell and garnish with raw pecans. Chill the pie in the freezer overnight or for at least 5 hours before serving.
